Cranberry Pear Salsa

As my mom and I were discussing the menu for Thanksgiving dinner I realized that most of the dishes we are making are on the heavy side. It’s no wonder we all slip into food induced comas every year! This got me thinking of an appetizer I could serve for everyone to graze on while the turkey is baking that won’t make us overly stuffed before dinner time (this happens to me every year). Along side the usual cheese and nut platter, I found a recipe for Cranberry Pear Salsa. This recipe comes from How Sweet It Is. I made it today (trial run) and I must say it is delicious. It has the perfect amount of sweet and spicy. Also, I love the idea of serving it with blue corn tortilla chips. Turkey day is right around the corner, hope ya’ll are ready.

Cranberry Pear Salsa

makes about 1 1/2 cups of salsa

1 1/2 cups fresh cranberries

1 anjou pear, peeled and chopped

1 large apple, peeled and chopped

1/4 red onion, chopped

1/2 jalapeno, chopped

1/3 cup fresh cilantro

the juice of two limes

the juice of one orange

4 tablespoons honey

1/4 teaspoon salt

Combine all ingredients in a food processor and blend until smooth. Taste and season with additional salt or honey if desired.

Note: this salsa can be very TART depending on your cranberries. Don’t be afraid to add more honey, salt or even a few spoonfuls of sugar (yes, sugar!) to the mix.

Warm Nights, Cool Eats

This past weekend  we were blessed with warm summer weather, finally. The sun was out and the last thing I felt like doing was cooking in my warm house. Instead, I decided to have my husband fire up the grill. To go along with our main course I made Creamy Gazpacho (recipe here) with Focaccia bread as an appetizer. As you all know, I am gluten free so instead of using traditional focaccia bread, I used a herbed pizza crust from a local bakery in Yakima, WA and grilled it for a few seconds on each side to warm it through. I stopped in at a local fruit stand to purchase all the ingredients. Everything was so amazingly fresh and the cold soup totaly hit the spot. It was incredibly easy to make and I think I will try it again at the next dinner party I have. This would be so darling served in little shot glasses with a dash of hot sauce.

Things that make me Smile

Very Berry Brie Appetizer served with crackers.

This summer hasn’t gotten off to a very bright or warm start here in the NW and I was beginning to find it hard to keep my spirits up. Each weekend has been passing by without many hours of sunshine and the lack of sun and time I’ve spent indoors has taken a toll on me. Also, my poor body has been working overtime to stay healthy and fight off a cold that is working very hard to stick around. Since this summer hasn’t been all that I’d hoped for, I thought it best that I take a few minutes to appreciate all the things in my life that are currently making me smile on a daily basis. 1. Baby Baron is growing like a little weed along with my belly 🙂 and I thank God everyday for this little miracle I am creating. 2. I appreciate every moment I get to spend with my husband and I know our life is about to change forever (in a good way of course). Some of the more simple nights in are becoming very important and memorable to me.  3. Doing small craft projects and using my creativity always brightens my mood. 4. Scoring good deals at Nordstrom immediately puts a smile on my face! 5. Doing anything to prepare for our little boy reminds me just how precious life really is. These are just a few things that make me smile; what puts a smile on your face?

"Missoni" inspired bird house I recently painted.

Attended the Nordstrom Anniversary Sale and made a few purchases.

Finding irresistibly adorable baby clothes to purchase.

Side table I found on sale for Baby Baron's room that I plan on painting a fun color. I'm leaning towards Orange, but I'll keep ya posted.

Where Am I?
