Southwestern Salad with Chicken Taquitos

Since winter seems to be hanging around a little longer than necessary I decided to lighten things up a bit and make a salad for dinner (which I’m usually not a huge fan of since I’m gluten-free and salads are my go-to when I eat out).  I made a delicious Southwestern Salad with Cilantro Lime dressing (recipe here) along with Baked Creamy Chicken Taquitos (recipe here). This meal totally hit the spot. The light dressing along with all the fresh veggies was refreshing and satisfying and the easy and delectable taquitos added some heartyness to the meal while being almost completely guilt-free. This is definitely something I will be making often and hopefully this meal inspires Mother Nature to push some warm southern air up north.


Everyday Feathers

As I have mentioned before (here), I am currently having a love affair with all things feather! That being said, Cee Lo and Gwyneth Paltrow’s rendition of F-you at the Grammys completely filled me with glee and left me searching the internet for Feather Duster Earrings. Gwyneth sashayed the stage sporting a fantastic body-hugging Stella McCartney jumpsuit accessorized with Christian Louboutin  mutlicolored booties and  (Ah-Ma-Zing) Wilfredo Rosado Diamond and Feather earrings that I haven’t stopped thinking about since they made their appearance.

Unfortunately, I’m not quite in the market for feather earrings accompanied with diamonds at the moment; but I was able to find some amazing substitutes that I think hit the mark. has an abundance of feather offering in all lengths and colors. Here are a few that stole my heart and may be making an appearance on my longing earlobes sometime soon. I’ll be sporting my earring with my favorite dark skinnies and black boyfriend blazer, how will you wear yours?

Hidden Treasures

Last weekend I had the opportunity to check out 2nd Satrudayz Market in Magnuson Park. A few friends of mine were hosting a pop-up boutique to showcase their amazing vintage finds. Tasha Headley and Julianne Johnson are fashionistas with an eye for style. They both have creativeness oozing out of them, which in turn makes for a shoppers dream! There were treasures from Moschino pumps, vintage sunnies, hats, scarves, gloves, 70’s fashions and trendy costume jewelry itching to be taken home and worn.

Tasha and Julianne both have fashion backgrounds and bring their talents to their boutique. They helped me find some items that will likely become heavily rotated in my closet this spring. I took home a red and tan sack dress, a disco inspired silver tank and a darling prairie dress I can’t wait to pair with a jean jacket and wooden wedges. This pare of divas have a bright future in the fashion industry and we are all blessed that they are willing to share with us. I can’t wait so see what treasures they find next.

Romance throughout the Year

I was absolutely thrilled when I heard that my favorite store, Anthropology, was coming out with a Wedding line. Ultimately, my excitement was quickly shattered when I realized I have absolutely no need for any of these gorgeous gowns since I’ve already had my dream wedding five years ago. But I just couldn’t pass up the opportunity to share these  beautifully crafted dresses with all of you who may be in need of one sometime soon or in the future. Happy 4th Birthday Martini!

Today there are two things to celebrate in our house, Valentine’s Day and the most important, Martini’s birthday! Four years ago my husband surprised me with Martini and he has been the best addition to our family. We’d be pretty bored without his cute little antics. He has yet to learn any real tricks but that’s ok. He is great to snuggle with, enjoys dancing around with me when I turn music on and he loves tortilla chips. Happy 4th Birthday Martini, here’s to many, many more!

Don’t forget to pass out your valentines as well; giving always feels better when it’s not done last minute. I made Citrus Sugar Cookies for my friends and loved ones because a homemade gift is the easiest way to say “I love you”. What will you be doing for your loved ones today?

I recently had an undeniable craving for CHEESECAKE! I could have gone to the store and picked one up for a quick fix, but since I’m Gluten-Free nothing at the store would have fully satisfied my taste buds. As I started going through some cheesecake recipes, I realized I wanted to make a traditional plain cheesecake with a graham cracker crust. We all know the best part of a cheesecake IS the graham cracker crust. Unfortunately, I have yet to come across gluten-free graham crackers so I took matters into my own hands and began looking for a recipe to make GF graham crackers from scratch. Thanks to my mom, she emailed me this recipe and they turned out amazing and were relatively simple to make.

Graham Crackers:

Dry Ingredients: 2 cups Unflour*, 1 tsp xanthan gum, 1 1/2 cups brown sugar, 1 tsp salt, 1 Tbsp baking powder, 3/4 tsp cinnamon.

Wet Ingredients: 1/2 cup butter (slightly softened), 1 tsp vanilla, 1/3 cup water.

Put dry ingredients in the bowl of a heavy mixer. With mixer on low add wet ingredients to dry. After mixing for about 2 minutes, dough should start to form a ball. Remove from mixer, dough should resemble a large ball of firm play dough. Preheat oven to 320 degrees. Grease cookie sheet and set aside. Divide dough in half and roll out 1/4 inch thick on a countertop dusted with cornstarch. You can cut the dough into rectangles, or use a cookie cutter of your choice. Cut dough and place on cookie sheet. Bake for 12-15 minutes. They will feel soft but firm up as they cool. Cool on cookie sheet for 5-8 minutes (the longer they cool on the sheet the crispier they will be. Makes about 2 dozen.


Ingredients: 6 cups rice flour (brown or white), 5 cups cornstarch, 3 cups tapioca flour.

Mix ingredients together and store in an airtight container until ready to use.

I ended up straying from a plain cheesecake, and decided to make an Ameretto Cheesecake. It was one of the best cheesecakes I have ever had. I may be a little bias but I’d dare you to find one better.
