2010 has been a year for the history books. As the clock winds down and I prepare for tonight’s festivities I take a moment and think back on all the things that made 2010 what it was. For me personally, this was a year of consistency as well as personal growth. Nothing changed drastically for me but I did start a few new endeavors (becoming a group fitness instructor and starting this blog) that I hope will continue to bring me happiness and success in 2011.

There were many events in 2010 that will never be forgotten, namely: the earthquake in Haiti, 2010 Winter Olympics, the release of the iPad, the Chilean earthquake and miner rescue, the first full face transplant, Obama and health care issues and the BP oil spill. I could continue on and on with events that marked our lives this year both positive and negative.

Not only were there events we will never forget but there we also events we can’t forget soon enough. If I never hear anything again about Lindsey Lohan, John & Kate and their poor eight children, Mel Gibson and his craziness, Tiger Woods and his lack of self control, Octomom or Heidi & Spencer it will be to soon.

So here’s to 2010! Let’s take with us all the great fashion and Alexander McQueen’s creative genius and make 2011 even better.

I’ve been feeling a bit lazy the past few days. I’m sure it has absolutely nothing to do with all the over indulging I did while I was at my parents place (wink, wink). My husband and I happened to both have a day off together and predicted rain was holding off; I thought what better than to go for a walk and do a little window shopping. In my cutest Rachel Zoe-esk top (I mean really, who doesn’t love a bow) and comfy heels, we were off. We checked out a few antique stores and I stumbled upon a kitchen store that I’m sure is going to become a favorite. Since I was recently spoiled rotten by my husband and family I thought it best to not make any purchases but there are a few things I saw that I think may need to be brought home in the near future.

Smoked Salmon Dip

Christmas Day has come and gone and I now prepare for New Years Eve. I was thinking of all the parties I have attended and all the delicious treats I have sampled (which, my extra snug skinny jeans are not thanking me for at the moment). I really don’t recall being too stressed out even though I was cooking or baking something almost everyday. A friend at work shared this amazing and easy recipe with me and I thought I would pay it forward and share it with you all. This dip has been my go-to these past couple of weeks and every time I make it I get rave reviews. So, here is to starting 2011 off on an easy note.

Ingredients: 1 12oz container of Whipped Cream Cheese, 1 jar of Cocktail Sauce, 1 package of Smokes Salmon (10-12oz), 1/2 lb of cooked shrimp, 1 cup finely shredded Colby Jack Cheese and 1 bunch green onion.

This is a simple five-layer dip. Start by spreading the cream cheese into a serving dish. Next, layer with cocktail sauce. Shred smoked salmon and cut shrimp into bite size pieces; mix these and layer on top of the cocktail sauce. Sprinkle cheese over salmon and shrimp and top with a generous handful of diced green onion. It’s that easy. Serve with crackers (I prefer Crunchmasters Gluten Free crackers).

 

Home for the Holidays

There is nothing quite like being home for the holidays. I rushed around town getting all my last minute presents purchased and wrapped and made sure everything important was taken care of before we left town and traveled over to  Eastern Washington. We were blessed that the snow held off while we traveled over the pass (since I am a VERY nervous passenger). We arrived yesterday to a Winter Wonderland. All this snow has definitely increased my Christmas Spirit.

Being with my husband, parents and brothers always makes me feel nostalgic and reminds me why I love Christmas so much. My mom always has the house decorated from top to bottom. Her fondness for snowmen is easily recognizable. The house always smells of treats and the fridge is overflowing with goodies. The animals run around like small children hopped up on sugar and time always passes too quickly. The best thing in life is being with the ones you love and creating new memories. I wish you all a very Merry Christmas and may your day be as special as mine.

All that Glitter

My festive Holiday socks

Last night I participated in a class at the gym that was “Glitter/Bling-Bling” themed. We were celebrating a friends farewell from teaching and she loves things that shine. I really think most girls are attracted to the shiny things in life, aka, Diamonds! Anyways, I’m more of a get down to business and sweat kinda girl when I’m at the gym so my glitter was limited to my festive holiday socks. I think I scored extra points since they have faux fur around the top.

Planning for class tonight made me think how much I love things that glitter and shine and how my Holiday decorating is mostly based around it. I thought I would share all things that glitter and are currently making me smile this Holiday season. What makes you smile?

Holiday Candy-Part 2

Recently my husband and I had three holiday parties to attend in two days. Since I never show up to a party empty handed, I decided to make homemade Peppermint Bark. There is absolutely nothing more simple and festive than this bark. You can always get creative and make bark with any combination of chocolate, nuts and dried fruit or candies; but the peppermint flavor just seems to exude the Christmas Spirit.

After making four batches, I realized that everyone should know how to make this wonderful treat. All you need is a bag of milk chocolate chips, a bag of white chocolate chips, peppermint extract and peppermint candies. Start by smashing candies in a ziplock bag with a rolling pin and set off to the side. Next, melt milk chocolate chips (I prefer to use a double boiler, but the microwave works just a well). Pour melted chocolate onto a parchment lined cookie sheet letting it set in the fridge for 30 minutes. When chocolate is close to being set, melt white chocolate chips along with 1/4 tsp peppermint extract. Pour melted white chocolate over hardened milk chocolate and sprinkle with crushed candies. Return to the fridge for another 30 minutes. Once set, break into big or small pieces, whichever you prefer and share. It’s really that simple! You can always buy this treat if you run out of time, but there is something so special about receiving a gift that is homemade. I hope all the recipients of your treats are as appreciative as mine were.

My husband and I went shopping the other day and happened to walk by a display of dog toys. We always like to get our Yorkie/Silky mix, Martini, a toy or two for Christmas each year, so we decided to pick up a few. When we got home I put our shopping bags in the guest room along with all the other presents waiting to be wrapped. Well, someone decided they couldn’t wait for Christmas and went snooping. Low and behold, Martini found his new toys and brought them downstairs like he was so proud of himself. Little stinker! ¬†I’m a big softy so I let him have his new toy and I guess I’ll just have to pick him up another one sometime. He is so spoiled.
