My husband recently celebrated his 28th birthday. Most birthday celebrations involve me going through my phonebook and making a list of friends to invite to a party. This is preceded with an hour or two spent on opentable.com researching a new and exciting restaurant that will suit everyones culinary tastes while bringing an element of excitement for those friends who haven’t been out in a while and making sure that paying for a babysitter and going to the trouble of getting all dolled up was well worth it when everything is said and done. To my surprise, this year turned out to be a little different and just as much fun in my opinion.
My husband and I have both been extremely busy lately and he requested an intimate night in with his closest friends and pizza! Since I’m gluten intolerant, pizza is not something that is really ever eaten at our house (unless I’m out of town or not around for dinner). Since it was his special day I made the sacrifice and watched my friends inhale the cheesy goodness while I had chips and veggies.
A birthday party is never complete without a cake, so I made a Chocolate Cake with Peanut Butter frosting for him. This part I wasn’t going to miss out on, so of course it was gluten-free and just as good as the original. Everyone left that night full of pizza, cake and sore abs from all the laughing. Happy Birthday Dan! I have a feeling this is going to be a great year for you:)
