Souffled Pumpkin Pancake

There is nothing better than inviting friends over to watch Sunday morning football and brunch. I’ll be honest, I’m not much for football; but when my husband starts tearing through any sports magazine or website he can get his eyes on I know what is coming up-Fantasy football and anything made with pumpkin! I absolutely adore baking with pumpkin. The aroma it creates brings back childhood memories of summer fading away and my Grandma’s famous Pumpkin bars. I have been dying to try this Souffled Pumpkin Pancake recipe from Katie Lee’s cookbook “The Comfort Table” since the minute I bought it. I also made the executive decision that when a pancake is involved there must be brown-sugar bacon and eggs over-easy. Oh, and how could we forget Mimosa’s and Irish Coffee. According to my husband, life doesn’t get any better than this, except for The NY Jets putting up a “W” for the week.

    I want this recipe, as it looks absolutely delicious. I also remember those famous pumpkin bars of moms sweetie. Now we just have to figure a way to make them gluten free with the same great taste of hers. Your blog site is great and I look forward to all your updates.
