Officially Fall!

With all the beautiful weather we’ve been having in Washington, I have been denying that return of Fall. The mornings start out cool and crisp and end with a high of 70. If you’ve ever lived on the western side of Washington State, you know that this is almost unheard of weather for October. Along with the arrival of Fall comes everything made with Pumpkin and I do mean everything! I have been so tempted (thanks to Pinterst) to bake with Pumpkin and am proud to say that I was able to hold off until a day with rain.

As I looked through all the different Pumpkin recipes I have, I decided that whatever I was going to make had to be amazing. Therefore, I went with Baked Pumpkin Donut Holes, because who doesn’t love a good donut. Since becoming Gluten Free I haven’t enjoyed a donut of any kind for at least three years and I am proud to say that the GF modifications I made were a success! These donuts turned out soft, full of flavor and had that perfect donut texture. It’s official, Fall is here so go and make a cup of coffee and enjoy these scrumptious little bites.

Baked Pumpkin Donut Holes (recipe modified from Two Peas & Their Pod)

1 3/4 Cups Gluten Free all-purpose baking flour (I used Bob’s RedMill)

3/4 tsp xanthum gum

1/2 tsp salt

1/2 tsp cinnamon

1/2 tsp nutmeg

1/2 tsp allspice

1/8 tsp ground cloves

1/3 cup canola oil (can substitute with all natural apple sauce)

1/2 cup light brown sugar

1 large egg

1 tsp Vanilla extract

3/4 cup canned plain pumpkin (not pumpkin pie filling)

1/2 cup milk

For the Coating: 4 Tbsp unsalted, melted butter, 2/3 cup granulated sugar and 2 Tbsp cinnamon

Preheat oven to 350. Spray a mini muffin tin with non-stick cooking spray and set aside.

In a medium bowl, whisk together all dry ingredients. In another bowl whisk together oil, brown sugar, egg, vanilla, pumpkin and milk until smooth. Add dry ingredients to wet ingredients and mix until just combined. Do not over mix.

Distribute batter evenly among muffin cups and bake for 10-12 minutes or until a toothpick comes out clean.

While muffins bake, melt butter in a small bowl and combine sugar and cinnamon in another small bowl. When muffins are done baking and while they are still warm, dip each muffin into melted butter and roll in cinnamon/sugar mixture to coat.

This past Summer I was asked (almost on a daily basis) what I do to get and keep my body in shape. At the time I was almost shy about the compliments (I can be really hard on myself and think my flaws stick out like a sore thumb). Since I include fitness as part of my lifestyle, I would tell people if you put the time in at the gym, you will eventually start to see the results you want. Most of my friends and family hate that I say this because as a fitness instructor I get a sweet little incentive for working out (also known as, a Paycheck).

Yesterday I had a little reminder of what it truly takes to reach and maintain fitness goals and I wanted to share a few tips for staying on track and not letting life take over. My husband wanted to meet a friend for a bike ride and since the mornings are cool and crisp there wasn’t anyway I was taking my little man outside. That is when I made the decision to put on the sneakers and pop in a DVD! I almost made it through the entire 30 minute workout before Cash woke up. Once I was done I felt fantastic and ready to start my day. Believe me, it isn’t easy to workout at home, but when time and and babysitting don’t work out it’s the next best thing.

Here are my top 5 tips to staying on track of your fitness goals:

1. Have a plan-schedule a time for working out! Making a workout part of your day will help you stick to your commitment.

2. Do push-ups every morning. I wake up and immediately do 25 or more push-ups before I do anything else. This is a great way to wake up your body and jump start your metabolism. Also, if you can’t get in a workout you at least started your day on the right track.

3. Have options! I have a small collection of workout DVD’s on hand so I never have a reason not to workout.

4. Have option! This one if for your kitchen. Having healthy options on hand makes it easy to reach goals. Remember, most goals are reached in the kitchen. Again, if you can’t get in a workout, you won’t be taking a step backwards if you are eating the right foods.

5. Make the decision that fitness is part of your lifestyle! Once your friends and family know how important is it to you, it will be easier for them to understand. When you only include fitness part-time it is easy for friends to talk you out of working out.

Fall Favorites

This past Labor Day Weekend was spend hanging with friends and over indulging to the max! Nothing is better than living life to its fullest and taking advantage of every last bit of sunshine but there is also a sweet nostalgia that comes with the end of summer. As the days grow shorter and that crisp fall air arrives I get excited for the things to come.

One of my favorite and most simple pleasures for fall is getting to use my dark nail polishes again. I love me a pop of pink or orange as much as the next girl but I feel more like my true self once my little finger tips embrace a darker hue. I adore dark polishes so much so that I had a manicure done with OPI’s Lincoln Park After Dark right before I gave birth to my son and I must say it really glammed up that fashionable hospital gown.

While out shopping with a friend this past weekend, I came across OPI’s My Private Jet. Once I got home, I immediately gave my fingers a polish change and I can safely say that this will be my “go to” color for the next month or so. This color has a dark base with a soft sparkle throughout, making it a perfect transition color from summer to fall.

Chocolate Chips with a Twist

The hubs and I participated in a Half Marathon this past weekend and I had to share the cookies I made for pre and post race energy. They were Ah-Maz-Balls (a little Giuliana shout-out)! I originally started my search for a cookie recipe that called for oat flour, as that was all I had on hand, and I ended up finding a recipe from Eat Drink Better that satisfied my sweet tooth while being gluten free, vegan (depending on any modifications) and healthy. Since oats are gentle on the tummy and a good source of complex carbs to provide energy, I am happy to say these cookies have instantly become my game day go to snack.

Oat Flour Chocolate Chip Cookies


  • 2 cups oat flour plus 1 cup whole oats (use certified gluten free oats for cookies to be 100% gf)
  • 1 cup white sugar
  • 1/3 cup brown sugar
  • 1 egg
  • 1/3 cup vegan margarine
  • 1 tsp vanilla
  • 1/4 cup canola or sunflower seed oil
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 3/4 cup vegan chocolate chips
  • Cooking Directions
    1. Pre-heat oven to 350°F and grease a baking tray.
    2.  Mix oat flour, sugar, salt, and baking soda in a bowl. Add margerine and oil and stir until mixed. If the mixture is too dry, add a tablespoon of soy milk. Add chocolate chips last and mix.
    3. Roll tablespoon-sized balls of dough and flatten them with the back of a wet spoon on your baking tray. Bake for about 10 minutes, or until golden brown.

3 Months-chillin with my frog

These past two months have been an absolute whirlwind! Mom and Dad have been going non-stop and I’ve been taken along for the ride. Here are just a few things we’ve done lately: I spent Thanksgiving in Yakima, had three Christmas’, spent New Years with some really fun people and watched them play an extremely silly game, traveled to Texas for Uncle Dustin and Auntie Christina’s wedding and just recently spent time with family friends and met my future sweetheart (perfect timing for Valentine’s Day).  All in all I would say Mom and Dad keep me extremely busy and sleeping through the night is never a problem.

2 Months and Growing!

It’s official, I’m 2 months old!  Time has gone by so quickly and every day is a new adventure. I’ve gotten to experience so many cool new things this past month. Both of my parents celebrated birthdays, Halloween happened, I finally got to meet my uncles Jarod and Dustin and I got to spend Thanksgiving with my Papa and Gigi.  I must say Thanksgiving was a blast and it helped me put on some LBs (here I am from last month). I’ve decided that life is extra wonderful when I sleep a little longer for mommy and smile at her and daddy. It’s the little things I do that make them so happy; they’re pretty easy to please. I have to be extra good these next couple of weeks because Santa is coming (I went and saw him the other day, I’ll show you my pic when mommy picks it up). One of my favorite things to do right now is lounge in my vibrating chair by the fireplace and enjoy the lights on the Christmas tree. Well mommy says I need to get off the computer and go take a bath. When daddy comes home, he’ll let me back on so stay posted and I’ll keep you updated on all my happenings.  Bye for now.


My uncles (Jarod and Dustin) were so fun. I can’t wait to see them again. I hear I get to go to Texas in January and see my Uncle Dustin get married to a real hottie (Christina Taylor).

Gigi made us take so many pictures and I just couldn’t stay awake for them all.  I must say, even though I’m asleep I still make the picture  look good.
